What should you do when drowning in strawberries? Make jam. Lots and lots of jam. Despite my husband’s heroic efforts to work his way through the kilos of strawberries I have harvested, there were tons leftover. Whilst giving strawberries to the chickens would undoubtedly result in their undying love for me, it wouldn’t be good for them!

I cut up half a kilo of strawberries, added a splash of lemon juice and heated it slowly. Once the strawberries began to cook, I added a terrifying amount of sugar. The boiling jam smelled amazing and even with the added complication of a broken water main (which meant no water in the house for half the day!), I am rather pleased with the end result.

The most difficult part is waiting for it to cool before sampling it…

Jam on toast is the best – a great big hug from the inside and being home made jam, the hug from the inside is even bigger 🙂

I’m really please at how the white strawberries have added to the taste – it’s a bit sweeter than normal jam 🥰

I can’t remember their name but they are ‘reverse’ strawberries with white flesh and red seeds
